For cooking you will need:
- 300 g eggplant;
- 300 g zucchini;
- 300 g of zucchini;
- 200 grams of tomato;
- 100 g paprika;
- 2 medium carrots;
- 2 onions;
- Clove of garlic, parsley, dill, salt, pepper.
Preliminary we will cut all prepared vegetables. To do this, thoroughly wash everything, peel the carrot and cut it into half rings. We also peel zucchini, zucchini and eggplants from the skin, cut them into small pieces or half rings.

How to cook an eggplant and pepper stew in the oven?
For cooking you will need:
- 2 eggplants;
- 2 bell peppers;
- 2 medium tomatoes;
- 2 carrots;
- 2 onions;
- 2-3 cloves of garlic, herbs, salt, pepper, vinegar.
In order for the eggplants to part easily with their skin, cut them into rings with a thickness of 1 cm, then rub them with salt and leave for a while. Then we clean the tomatoes from the skin. To do this, we make a cross-shaped incision on the top of each tomato, lower it for a few seconds in boiling water, and then remove it, cool it with cold water, after which the skin can be easily removed.
After that, the tomatoes are cut into six parts. We turn to bell pepper: it must be cleaned of stalks, hearts, and seeds, cut into six pieces in small slices. Carrots are also peeled, cut in medium longitudinal bars.
Eggplant slices, peppers and tomatoes are fried in a griddle separately, after which they are all laid out on a baking sheet and baked in an oven at 180 °.
While the vegetables are baked, turn to carrots and onions.Heat the pan well, then pour a little olive oil on it, then onions and carrots are fried on it until golden brown.
After that, the fire is reduced to a minimum, and a tablespoon of vinegar and a tablespoon of sugar are added to the pan, in this mass the onions and carrots are slightly stewed, and then added to the main vegetables on a baking sheet, they must be evenly distributed, at the same time we add chopped garlic .
The whole saute should be spent in the oven for about 50 minutes, after which the baking sheet is removed from the oven and the saute is decorated with chopped greens and garlic. Done!
Vegetable saute recipe with green peas
To prepare the recipe you will need:
- 1 red sweet pepper;
- 1 carrot;
- 200 g of zucchini;
- 100 grams of green peas;
- 100 g cherry tomatoes;
- 1 onion;
- 1 clove garlic, salt, pepper, butter.
Zucchini cut into thin half-rings, then peel the Bulgarian pepper and carrots, cut them into strips. The saucepan is properly heated over high heat, pour the sunflower oil, then lay out the prepared zucchini, carrots, paprika and chopped half rings, onions.
All the ingredients are roasted on high heat for about two minutes, periodically shake the saucepan. Two minutes later, green peas are added, everything is fried for about two minutes, then garlic is added, and the mixture is also seasoned with salt and pepper.
After that, add the halves of cherry tomatoes, shake everything several times and fry for another 2-3 minutes. Sote is ready! In this recipe, instead of a saucepan, you can use a thick-walled frying pan.
