German cuisine, as it turned out, is not only meat sausages and beer, it is also sweet, you did not know? The Germans still have those sweet teeth! Berlin biscuits, which are commonly called “ears” in our country, are popular far beyond the borders of Germany itself, they are very fond of not only here, but also in France, Switzerland and other European countries.

Of course, in order to taste the real Berlin cookies, it’s best to go straight to his homeland. On the other hand, this is not at all necessary, because the ears can be made with your own hands, it is completely easy! How? We will share with you the most interesting recipes. So, what is this delicacy?

In fact, everything is simple: cookies are made from soft puff pastry, which is twisted in the shape of hearts, and coated on top with sweet icing, chocolate or syrup.A special highlight of the Berlin interpretation is a hint of lemon zest, which comes across either in the dough itself or in the glaze, often made with the addition of cottage cheese - it turns out very tender and tasty. So let's try something to cook?

Classic recipe

For the preparation we need:

  • butter - 250 g;
  • wheat flour - 2 glasses;
  • milk - 50 ml;
  • chicken eggs - 2 pieces;
  • sugar - 100 g

Did you know that puff pastry is dietary and you can even eat it if you have any problems with your stomach? In addition, puff pastry goes well with fruit, berries, and in salty form - with fish and even meat.

But today we are talking about cookies, how to make such a treat? In a dry container, beat the eggs with a tablespoon of sugar until a light crema is formed, then add milk and beat again well. Do not forget to soften the oil in advance, then add it to the total mass and whip everything again (it is better to use a mixer for these purposes).

Next pour the flour, mix and quickly knead the dough. The consistency of the dough should be soft, but at the same time, not to stick to hands, so the amount of flour should be strictly regulated, it is important not to overdo it.If the dough still continues to stick, then try adding cold water to a teaspoon, while stirring constantly.

Then it is necessary to roll it into a large pancake, fold it four times, and then repeat this sequence of actions again. Then the finished dough must be removed in the refrigerator for 40 minutes so that it has time to get stronger and settle.

Then it is necessary to roll it out, sprinkle it with sugar and start twisting on both sides until you reach the middle, then cut the double roll into slices, so to speak, divide it into “ears”. Spread our cookies on a prepared baking tray covered with parchment, sprinkle with sugar and tart with cinnamon, and then send to the oven to bake for 15 minutes at a temperature of 220 °. Naturally, the oven should be preheated. That's all!

Recipe "ears" with cottage cheese

Sweet and tender ears can be cooked with a twist, for example, by adding some cottage cheese to them. So what do we need?

  • cottage cheese - 20 g;
  • flour - 200 g;
  • butter - 200 g;
  • sugar - 100 g;
  • baking powder - 2 tsp;
  • lemon juice - from 2 lemons;
  • powdered sugar.

Mix the flour with a baking powder, add a pinch of salt. We soften the butter, chop it into pieces and add to the flour as well, pour the cottage cheese here, mix everything thoroughly. Then the dough is shifted to the kitchen surface or table, pre-sprinkled with flour, rolled into a layer with a thickness of not more than 5 mm, crush and repeat the manipulation 5 times. Then crush the dough and send to the freezer to rest for an hour. Now again we repeat the above described manipulations only now on the table, sprinkled with sugar.

Roll out the dough again and start rolling to the middle on both sides, then cut the roll into small pieces, spread them on a prepared baking sheet (at a distance from each other), and then send to the oven to bake for 15-20 minutes at a temperature of 220 °. When the cookie is ready, you can pour it with home-made syrup to enhance the taste: for this, mix the lemon juice with a glass of powdered sugar, and then lubricate it with ready-made ears.
